    Thats good to know. I'll bet there are many coronary artery disease folks who have not received updated information about shellfish who are avoiding it.

    hearty soup

    On Sunday, I used a Bob's Red Mill package of beans (13 Beans) for a huge pot of soup. Having just finished a big bowl for lunch, I thought I'd share the goodness because this is so simple to make but is really good. The 13 Bean Soup Mix contains navy, black, red, pinto, baby limas, large limas, garbanzo, red lentils, great northern, kidney beans, black-eyed peas, yellow splits, green splits, and lentils. The beans can be soaked overnight or, more quickly, boiled for 5 minutes and let to soak for an hour. Then they are simmered for about 3 hours with adquate water to keep them covered. After that, I add a few things. It's never exactly the same way twice. This time, I seasoned with garlic and some salt, added a large can of organic crushed tomatoes, a couple of cups of organic vegetable stock, a diced red onion, a diced yellow pepper, about 8 kale leaves chopped, and a couple of chopped carrots. This was simmered for another hour and a half. Plenty of protein, complex carbs, vitamins and a nice measure of all the good stuff in kale which you can't get too much of. We'll have it several times over the next few days (or it can be frozen).

    That sounds good Rick, I'll have to try it. I've been eating lots of beans lately and my weight is finally going down.

    Black Bean Burgers

    1-15oz can of Black Beans
    2-Egg whites
    3-tbsp whole wheat bread crumbs
    A dash of lemon juice and olive oil
    your choice of seasoning including:
    cayenne pepper
    chili powder
    cummin
    black pepper
    garlic powder

    Hopefully you have a mini-blender, but if not use a blender or even hand-mixer to burr the beans until smooth. Add the egg whites and blend again. Add lemon juice, olive oil, seasonings and blend again. Finally, add the bread crumbs last for consistency. You may need a spoon to mix throughly as you want the mix pretty thick so it will stay in patty form when cooking. This will make three patties. I usually double the recipe but only add one more egg white. The thicker the mix the better to ensure it all stays together when you flip it. More bread crumbs will do the trick.

    They cook just like burgers but you'd want to use foil if you use a bbq. Top with pepper jack cheese, spinach leaves, and avocado.
