hearty soup
On Sunday, I used a Bob's Red Mill package of beans (13 Beans) for a huge pot of soup. Having just finished a big bowl for lunch, I thought I'd share the goodness because this is so simple to make but is really good. The 13 Bean Soup Mix contains navy, black, red, pinto, baby limas, large limas, garbanzo, red lentils, great northern, kidney beans, black-eyed peas, yellow splits, green splits, and lentils. The beans can be soaked overnight or, more quickly, boiled for 5 minutes and let to soak for an hour. Then they are simmered for about 3 hours with adquate water to keep them covered. After that, I add a few things. It's never exactly the same way twice. This time, I seasoned with garlic and some salt, added a large can of organic crushed tomatoes, a couple of cups of organic vegetable stock, a diced red onion, a diced yellow pepper, about 8 kale leaves chopped, and a couple of chopped carrots. This was simmered for another hour and a half. Plenty of protein, complex carbs, vitamins and a nice measure of all the good stuff in kale which you can't get too much of. We'll have it several times over the next few days (or it can be frozen).
